A glorious morning. Blue sky and puffy white clouds. Went for a dog walk on a route I haven't tried before. Really peaceful. Got too hot in my coat, scarf and gloves. I love Spring!
Don't want to put people off having Canadian pancakes. I don't usually feel ill after I've had them. Think I must have been a bit liverish. Here's the recipe. It's very scrummy! I use gluten-free flour, soya milk and xylitol. But obviously you can use whatever you usually use.
Pancakes
1 1/4 Cups Flour (Very fluffy and light if you use self-raising flour)
2 Tbsp Sugar (Optional)
2 tsp Baking powder
1 Egg
1 Cup Milk
1 Tbsp Oil
Handleful or so of raisins, sultanas, currants (Optional)
Put all ingredients in a jug or bowl and whizz together with a whisk or a spoon. I usually add more milk or they just end up too thick. Heat some oil in a frying pan until good and hot then pour out the excess into a cup so a coating of oil is left. Spoon small blobs into the pan and brown on one side flip over and brown on the other. Serve with fruit or whatever does it for you, but definitely try it with lots of maple syrup. Yum!
